Preheat oven to 400F.Cream the following well with mixer:
1 cup granulated sugar
1 cup brown sugar
1 teaspoon vanilla
2 eggs
Add the following and mix well:
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon fresh! baking powder
1/2 teaspoon salt
Stir into the batter:
2 cups quick rolled oats
1 cup angel cocoanut
Drop by spoonfuls on a greased baking sheet, or use a small (3/4 oz) scoop. Bake at 400F until edges are brown, about 8-9 minutes.
