1 cup flour
1/3 cup sugar
1/3 cup brown sugar
1/3 cup oatmeal
dash of salt
1 tsp cinnamon
1/4 cup stick butter or margarine
1 tsp baking powder
1/2 tsp baking soda
1 egg
1/3 cup lowfat milk
1 tsp vanilla
1 1/2 cup tart baking apple coarsely chopped
Mix together first six ingredients until the mixture resembles coarse crumbs. Reserve 1/2 cup of the flour mixture for topping, set aside.
Combine remaining flour mixture with baking soda and baking powder. Add egg, milk and vanilla. Beat together until well blended. Fold in diced apple. Pour batter into a pie pan coated with cooking spray. Do not use a metal pan - glass or stoneware works best.
Sprinkle with remaining flour mixture.
Bake at 350 degrees for 25-30 minutes or until edges are golden and center springs back when touched lightly in center. Cut into wedges.
Best when served warm.
