Layered Eggs

18 eggs, lightly scrambled

1/2 lb cooked bacon/ham/lobster, etc

1 cup sour cream

Shredded cheese

(see additional combo suggestions below

Preheat oven to 250 degrees

Spray medium (9x13), shallow glass baking dish. Add scrambled eggs and 'chop' with spatula to create even base. Dollop sour cream and spread evenly to cover eggs. Sprinkle evenly with meat/seafood, other toppings then cheese. Cover and refrigerate over night. Bake 20 minutes then uncover and bake until cheese is melted about 10-15 mins. Rest covered about 5 minutes and cut into squares to serve.

Some combinations you can try:

- finely chopped red onion/scallion is nice.

- smoked ham/bacon, mushrooms, cheddar & scallion

- smoked salmon, jarlsburg/swiss, goat cheese, capers & red onion

- lobster, fontina, scallion, sundried tomatoes & fresh basil
